Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, and sear them until golden brown on both sides (about 5 minutes each side).
Mixing and Baking
- In a bowl, mix sour cream, minced garlic, and a pinch of salt and pepper.
- Transfer the seared chicken breasts to a baking dish, then spread the sour cream mixture over the chicken.
- Sprinkle shredded Jack cheese on top of the sour cream mixture.
- Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Serving
- Garnish with chopped green onions and a dusting of paprika before serving.
Notes
To store leftovers, place the Smothered Chicken in an airtight container. Keep in the refrigerator for up to 3 days or freeze for up to 2 months. Thaw in the fridge before reheating. Adjust garlic to taste and feel free to substitute cheese varieties.
