Preparation
- Preheat the oven to 400°F (200°C).
- In a shallow bowl, whisk the eggs together.
- In another bowl, mix the breadcrumbs, ranch seasoning, garlic powder, and smoked paprika.
- Dip each smashed chicken breast into the egg mixture, then coat it with the breadcrumb mixture.
- Place the coated chicken on a baking sheet.
Cooking
- Bake for 25-30 minutes or until the chicken is golden and cooked through.
Notes
Serve with your choice of dips or enjoy plain. This dish can also be served as a sandwich filling with lettuce and your favorite sauce. Leftovers can be stored in the fridge for 3-4 days or frozen for longer storage. To reheat, bake at 350°F (175°C) until warmed through.
