  • 2 pieces chicken breasts, smashed thin Make sure to smash the chicken breasts evenly for even cooking.
  • 2 pieces eggs
  • 1 cup breadcrumbs Use fresh breadcrumbs for a better texture.
  • 1 packet ranch seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika Feel free to adjust the seasoning to your taste.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a shallow bowl, whisk the eggs together.
  3. In another bowl, mix the breadcrumbs, ranch seasoning, garlic powder, and smoked paprika.
  4. Dip each smashed chicken breast into the egg mixture, then coat it with the breadcrumb mixture.
  5. Place the coated chicken on a baking sheet.
Cooking
  1. Bake for 25-30 minutes or until the chicken is golden and cooked through.

Notes

Serve with your choice of dips or enjoy plain. This dish can also be served as a sandwich filling with lettuce and your favorite sauce. Leftovers can be stored in the fridge for 3-4 days or frozen for longer storage. To reheat, bake at 350°F (175°C) until warmed through. For variations, you can add cheese to the breadcrumb mixture or try different seasonings.
