Preparation
- Soak the navy beans overnight in water.
- Drain and rinse the beans, then place them in a pot and cover with fresh water.
- Bring to a boil, then reduce heat and simmer for 30 minutes or until tender.
Cooking
- In a separate large pot, cook the chopped bacon over medium heat until crispy.
- Add the diced onion and cook until softened.
- Stir in the brown sugar, molasses, ketchup, mustard powder, smoked paprika, salt, pepper, and apple cider vinegar.
- Add the cooked beans to the pot, mix well, and add enough water to cover the beans.
- Transfer to sterilized jars, leaving 1 inch of headspace.
- Process in a hot water bath for 1 hour.
- Allow to cool before sealing.
Notes
Make sure to soak the beans for at least 8 hours to ensure they cook evenly. Adjust the level of spice and sweetness according to your taste. Ensure your jars are properly sterilized before filling them to keep the beans safe for storage.
