Preparation
- Preheat your oven to 375°F (190°C). Lightly grease a muffin tin to prevent sticking.
- In a large mixing bowl, combine ground beef, breadcrumbs, ketchup, Worcestershire sauce, smoky bourbon BBQ sauce, garlic powder, salt, and pepper. Mix gently until all ingredients are incorporated.
- Divide the mixture into 8 equal parts. Form each into a cupcake-sized mound and wrap each one with a slice of bacon, placing it seam-side down in the muffin tin.
- Bake the cupcakes for 25–30 minutes, or until the bacon is crispy and the meatloaf is cooked through to an internal temperature of 160°F (71°C).
- While the meatloaf cupcakes bake, prepare your mashed potatoes to be thick and buttery.
- Let the cupcakes cool slightly before topping them with the mashed potatoes like frosting. Garnish as desired.
