For the Meatloaf
  • 1 lb ground beef (preferably 80/20 for juiciness)
  • ½ cup breadcrumbs
  • ¼ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp smoky bourbon BBQ sauce
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8 slices bacon
For the Mashed Potatoes
  • 2 cups mashed potatoes (smooth and firm enough for piping)

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a muffin tin to prevent sticking.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, ketchup, Worcestershire sauce, smoky bourbon BBQ sauce, garlic powder, salt, and pepper. Mix gently until all ingredients are incorporated.
  3. Divide the mixture into 8 equal parts. Form each into a cupcake-sized mound and wrap each one with a slice of bacon, placing it seam-side down in the muffin tin.
  4. Bake the cupcakes for 25–30 minutes, or until the bacon is crispy and the meatloaf is cooked through to an internal temperature of 160°F (71°C).
  5. While the meatloaf cupcakes bake, prepare your mashed potatoes to be thick and buttery.
  6. Let the cupcakes cool slightly before topping them with the mashed potatoes like frosting. Garnish as desired.
