  • 1/2 teaspoon cinnamon For serving, a sprinkle of cinnamon can be added.

  • 1/2 cup raisins (optional) Can substitute with cranberries or apricots.

Method
 

Preparation
  1. Rinse the rice under cold water until the water runs clear.
Cooking
  1. In a slow cooker, combine the rice, milk, sugar, vanilla extract, cinnamon, and salt.
  2. Stir well to combine, and if desired, add raisins.
  3. Cover and cook on low for 4-5 hours, stirring occasionally, until the rice is tender and the mixture is creamy.
Serving
  1. Serve warm, or let it cool slightly before serving. Top with cinnamon, honey, or fresh fruit if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for 3-4 days. Add a splash of milk when reheating if the pudding thickens.
