  • 2 lbs beef chuck roast, cut into chunks
  • 2 cups dried pinto beans, rinsed (or 3 cans, drained) If using canned, add during the last hour of cooking.
  • 1 medium onion, chopped
  • 2 cans green chiles Adjust amount based on spice preference.
  • 4 cups beef broth
  • 1 teaspoon cumin
  • Salt and pepper to taste

Preparation
  1. In a slow cooker, combine beef, pinto beans, onion, green chiles, beef broth, cumin, salt, and pepper.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 8 hours, or until beef is tender and beans are cooked through.
  4. Serve hot, garnished with fresh herbs if desired.

Notes

If using dried pinto beans, soak them overnight for the best texture. For a thicker stew, blend a portion of the beans and stir back into the mixture. Feel free to add in other vegetables for added flavor and nutrition.
