  • 1.5 lbs boneless skinless chicken thighs
  • 1 lb baby potatoes Washed and whole
  • 3 large carrots Peeled and sliced into chunks
  • 2 cups fresh green beans Trimmed
  • 1 small onion Diced
Sauce Ingredients
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 3 cloves garlic Minced

Method
 

Preparation
  1. Prepare the vegetables: Wash the baby potatoes, peel and slice the carrots into chunks, trim the green beans, and dice the onion.
  2. Place the boneless skinless chicken thighs at the bottom of the slow cooker insert.
  3. Scatter the prepared potatoes, carrots, green beans, and diced onion around and over the chicken pieces.
Sauce Preparation
  1. In a small bowl or measuring cup, whisk together the honey, soy sauce, ketchup, and minced garlic until smooth.
  2. Pour the sauce evenly over the ingredients in the slow cooker.
Cooking
  1. Cover the slow cooker with the lid and cook on low heat until the chicken is tender and the vegetables are soft.
  2. During the last hour of cooking, add the green beans to keep them bright and slightly crisp.
Serving
  1. Spoon some of the rich cooking juices over the chicken and vegetables before serving.

Notes

For a thicker sauce, simmer removed liquid in a saucepan until reduced. Optional garnishes include green onions or sesame seeds.
