  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 cup rice Any type of long-grain rice can be used.
  • 1 onion, chopped A yellow or white onion works well.
  • 1 can (10.5 oz) tomato soup Can use any brand or type of tomato soup.
  • Salt and pepper to taste Adjust according to personal preference.
  • Optional: shredded cheese for topping Cheddar or mozzarella can be great options.

Method
 

Preparation
  1. In a skillet, brown the ground beef and onion until cooked through. Drain excess fat.
  2. In a slow cooker, combine the cooked beef and onion, rice, tomato soup, and season with salt and pepper.
  3. Add 2 cups of water or broth to the mixture and stir well.
Cooking
  1. Cover and cook on low for 4-6 hours or until rice is tender and cooked through.
  2. Optional: Top with shredded cheese before serving.

Notes

Serve hot with a side salad or steamed vegetables. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 2 months. For reheating, thaw overnight and warm in the microwave or on the stove.
