Preparation
- In a large slow cooker, place the chopped onion and garlic on the bottom.
- Season the beef with salt and pepper, then place it on top of the onions and garlic.
- Add the carrots and potatoes around the beef.
- Pour in the beef broth and red wine if using.

- Cover and cook on low for about 6-8 hours or until the meat is tender and shreds easily with a fork.

- It pairs well with crusty bread, rice, or mashed potatoes to soak up the delicious juices.

Choose a good cut of beef like chuck roast or brisket for the best results. Feel free to add other vegetables like celery or parsnips for extra flavor. For a little kick, add a teaspoon of red pepper flakes or a splash of hot sauce. Allow the meat to rest for a few minutes before shredding for easier handling.
