Ingredients
  

Pasta and Beef Mixture
  • 16 oz penne pasta
  • 1 lb ground beef
  • 1 white onion, chopped
  • 30 oz sloppy joe sauce (two 15 oz cans)
Cheese Toppings
  • 8 oz shredded Velveeta cheese Mix into pasta for creaminess
  • 8 oz shredded Colby Jack cheese For topping

Method
 

Preparation
  1. Bring a large pot of salted water to a boil.
  2. Add the penne pasta and cook until tender according to package instructions. Drain and set aside.
  3. Heat a large skillet over medium heat and add the ground beef and chopped onion.
  4. Cook while stirring occasionally until the beef is fully browned and the onion is soft and fragrant.
  5. Drain any excess grease from the skillet.
  6. In a large mixing bowl, combine the cooked pasta, browned beef and onion, sloppy joe sauce, and Velveeta cheese. Stir until evenly mixed.
Baking
  1. Grease a 9×13-inch baking dish and pour the pasta mixture into it, spreading evenly.
  2. Sprinkle the Colby Jack cheese evenly over the top.
  3. Preheat the oven to 350°F and bake until cheese melts and edges begin to bubble.
  4. For a crispy finish, turn on the broiler for the last minute of cooking.

Notes

Cooking the pasta until just tender helps maintain texture after baking. Broiling briefly adds a crispy top layer. Can customize with bell peppers, mushrooms, bacon bits, or jalapeños.
