Preparation
- Bring a large pot of salted water to a boil.
- Add the penne pasta and cook until tender according to package instructions. Drain and set aside.
- Heat a large skillet over medium heat and add the ground beef and chopped onion.
- Cook while stirring occasionally until the beef is fully browned and the onion is soft and fragrant.
- Drain any excess grease from the skillet.
- In a large mixing bowl, combine the cooked pasta, browned beef and onion, sloppy joe sauce, and Velveeta cheese. Stir until evenly mixed.
Baking
- Grease a 9×13-inch baking dish and pour the pasta mixture into it, spreading evenly.
- Sprinkle the Colby Jack cheese evenly over the top.
- Preheat the oven to 350°F and bake until cheese melts and edges begin to bubble.
- For a crispy finish, turn on the broiler for the last minute of cooking.
Notes
Cooking the pasta until just tender helps maintain texture after baking. Broiling briefly adds a crispy top layer. Can customize with bell peppers, mushrooms, bacon bits, or jalapeños.
