Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
- In a large skillet over medium heat, brown the ground beef. Drain off any excess fat.
- Add the diced onion, bell pepper, and garlic. Sauté for about 5 minutes, or until the vegetables are softened.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, salt, and pepper. Simmer for 5–10 minutes, allowing the flavors to meld.
- In a large mixing bowl, stir together the cooked pasta and the beef mixture. Mix in 1 cup of cheddar cheese.
- Pour the mixture into your prepared baking dish and spread it out evenly. Sprinkle the remaining 1 cup of cheddar cheese on top. If using, add a layer of crushed crackers or French fried onions for extra crunch.
Baking
- Bake for 20–25 minutes, or until the casserole is hot and bubbling, and the cheese is melted and golden.
- Let the casserole cool for about 5 minutes before serving.
Notes
Can be made ahead and refrigerated for up to 3 days. Also, you can freeze the assembled casserole, thaw overnight, and bake as instructed.
