Preparation
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish (a 9×13-inch dish works well).
- In a large skillet over medium heat, melt the butter with the olive oil. Add the garlic and sauté briefly until fragrant.
- Add the shrimp and cook for 2–3 minutes per side, just until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, pour in the chicken broth, heavy cream, lemon juice, lemon zest, and white wine if using. Stir well and let the sauce simmer for 3–4 minutes until slightly thickened.
- Season with salt, pepper, and red pepper flakes to taste.
- Return the shrimp to the skillet and gently toss to coat them in the sauce.
- Transfer everything to the prepared baking dish. Sprinkle evenly with mozzarella and Parmesan cheese.
Baking
- Bake for 10–12 minutes, until the cheese is melted, bubbly, and lightly golden.
- Remove from the oven, garnish with fresh parsley, and serve hot.
Notes
Add spinach, cherry tomatoes, or roasted red peppers for extra color. Make it spicy with extra red pepper flakes or a pinch of cayenne. Swap shrimp for scallops or chunks of white fish. For a low-carb option, serve over zucchini noodles or steamed broccoli.
