Ingredients
  

For the Chicken and Vegetables
  • 4 pieces boneless skinless chicken breasts
  • 1 lb asparagus
  • 6 medium red potatoes Cut into chunks
  • 3 tbsp vegetable oil
  • 1 oz ranch dressing mix
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 c ranch dressing
  • 3 c panko bread crumbs

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the red potatoes into chunks and toss them with vegetable oil, ranch dressing mix, salt, and pepper. Spread them evenly on a sheet pan.
  3. Place the chicken breasts on the pan and coat them with ranch dressing.
  4. Sprinkle panko bread crumbs over the chicken.
  5. Add the asparagus to the pan and drizzle with olive oil, salt, and pepper.
Cooking
  1. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.

Notes

Make sure to cut the potatoes into similar-sized pieces for even cooking. For extra flavor, marinate the chicken in ranch dressing for an hour before cooking. Feel free to add other vegetables like bell peppers or carrots for more variety. You can substitute skinless chicken thighs for breasts and use crushed whole-grain crackers for a different texture.
