Ingredients
  

For the marinade
  • 1 pound chicken (or beef/lamb)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
For serving
  • Pita bread or flatbreads
  • Fresh vegetables (lettuce, tomatoes, onions)
  • Garlic sauce or tahini sauce for serving

Method
 

Preparation
  1. Cut the chicken into thin strips.
  2. In a bowl, mix olive oil, lemon juice, garlic, cumin, coriander, paprika, turmeric, and cinnamon. Add salt and pepper.
  3. Add the chicken to the marinade. Mix well and let it sit for at least 30 minutes, or up to overnight in the fridge.
Cooking
  1. Heat a grill or skillet over medium heat.
  2. Cook the marinated chicken for about 10-15 minutes, or until fully cooked and golden brown.
  3. Remove from heat and let the chicken rest a few minutes before slicing it thinly.
Serving
  1. Warm the pita bread in a dry skillet or microwave.
  2. Fill each pita with slices of chicken and top with fresh vegetables and your choice of sauce.

Notes

Allow the chicken to marinate for longer for extra flavor. Use fresh herbs like parsley or mint for a fresher taste. Adjust the spices according to your taste preference. Ensure the chicken is cooked properly for safety.
