- In a large bowl, whisk the pudding with the milk until it is well mixed and thick.
- Gently fold in the Cool Whip until blended smoothly.
- Add the peppermint extract and green food coloring. Stir until everything is fully combined and the color is even.
- Pour the mixture into the pie shell.
- Cover and refrigerate overnight to allow it to set.
Notes
Serve chilled with whipped cream or chocolate shavings on top. Store covered in the refrigerator for 3 to 4 days.
