Ingredients
  

For the crust
  • 1 pie crust 1 graham cracker or shortbread pie crust
For the filling
  • 2 packages 2 packages vanilla pudding
  • 2 cups 2 cups milk
  • 1 8 oz container 1 8 oz container Cool Whip
  • 0.5 teaspoon 1/2 teaspoon peppermint extract Adjust to taste for stronger mint flavor.
  • 16 drops 16 drops of green food coloring Add more if a vibrant green color is desired.

Method
 

Preparation
  1. In a large bowl, whisk the pudding with the milk until it is well mixed and thick.
  2. Gently fold in the Cool Whip until blended smoothly.
  3. Add the peppermint extract and green food coloring. Stir until everything is fully combined and the color is even.
  4. Pour the mixture into the pie shell.
  5. Cover and refrigerate overnight to allow it to set.

Notes

Serve chilled with whipped cream or chocolate shavings on top. Store covered in the refrigerator for 3 to 4 days.
