Preparation
- Heat the olive oil in a medium pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the diced carrot and bell pepper. Cook for another 5 minutes until they soften.
- Stir in the rice and cook for 1-2 minutes until it is slightly toasted.
- Pour in the water or broth and add salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low.
- Cover the pot and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit for a few minutes before fluffing with a fork.
Notes
Savoury Rice can be served as a main dish or a side. It pairs well with grilled meats, roasted vegetables, or a fresh salad. Top it with herbs for extra flavor. To store leftover Savoury Rice, allow it to cool completely, place it in an airtight container and refrigerate for up to 4 days, or freeze for up to 2 months.
