  • 500 g large shrimp, peeled and deveined
  • 2 cups snow peas, trimmed
  • 1.5 cups mushrooms, sliced
  • 3 cloves garlic, finely minced
  • 1 tablespoon vegetable oil for cooking
  • 1 teaspoon fresh ginger, grated optional
  • 1 teaspoon red pepper flakes optional
  • 1 teaspoon salt to taste
  • 1 teaspoon freshly ground black pepper to taste
  • 1 green onion sliced for garnish
Sauce ingredients
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Method
 

Preparation
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger; sauté for 1 minute until fragrant.
  2. Add the shrimp and cook until they turn pink, about 2-3 minutes.
  3. Stir in the mushrooms and snow peas, cooking for another 2-3 minutes until the vegetables are tender-crisp.
  4. In a small bowl, mix soy sauce, oyster sauce, sesame oil, cornstarch, water, and red pepper flakes (if using).
  5. Pour the sauce over the shrimp and vegetables, stirring well until the sauce thickens, about 1-2 minutes. Season with salt and pepper.
  6. Serve immediately, garnished with sliced green onion.

Notes

This dish is best served hot from the skillet. It can be placed over a bed of steaming white rice or served with noodles. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a pan over medium heat until warmed through. To avoid rubbery shrimp, do not overcook them, and feel free to customize vegetables as desired.
