- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger; sauté for 1 minute until fragrant.
- Add the shrimp and cook until they turn pink, about 2-3 minutes.
- Stir in the mushrooms and snow peas, cooking for another 2-3 minutes until the vegetables are tender-crisp.
- In a small bowl, mix soy sauce, oyster sauce, sesame oil, cornstarch, water, and red pepper flakes (if using).
- Pour the sauce over the shrimp and vegetables, stirring well until the sauce thickens, about 1-2 minutes. Season with salt and pepper.
- Serve immediately, garnished with sliced green onion.
Notes
This dish is best served hot from the skillet. It can be placed over a bed of steaming white rice or served with noodles. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a pan over medium heat until warmed through. To avoid rubbery shrimp, do not overcook them, and feel free to customize vegetables as desired.
