Sausage, Egg and Cheese Breakfast Sandwiches

Ingredients
  

For the Sandwiches
  • 12 eggs Use large eggs for best results.
  • 1 cup milk For scrambling the eggs.
  • 1 package of frozen sausage patties Cook as per package instructions.
  • 6 slices Provolone cheese Add more or less cheese as desired.
  • 6 slices Swiss cheese Feel free to substitute based on preference.
  • 6 English muffins Split and toasted.
  • to taste Salt Season eggs and sausage.
  • to taste Pepper Season eggs and sausage.
  • as needed Cooking spray For greasing the pan.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Toast the English muffins in the oven.
  3. Cook the frozen sausage patties in the oven at 425°F for about 20 minutes.
  4. In a bowl, scramble 12 eggs with a little milk, salt, and pepper.
  5. Spray a 9X13 baking pan with cooking spray and pour the egg mixture into it. Cook at 300°F (150°C) for 20 minutes.
  6. Cut the baked eggs into 12 squares.
Assembly
  1. Assemble each sandwich by placing one egg square, one sausage patty, and a slice of cheese (provolone and Swiss) on a toasted English muffin.
  2. Wrap each sandwich in parchment paper and freeze for later use.

Notes

These sandwiches can be served warm with a side of fresh fruit or hash browns. You can also enhance the flavor with hot sauce or your favorite condiments. Experiment with different cheeses or add vegetables for flavor and nutrition. Use turkey or veggie sausage for a lighter version.
