- In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it into crumbles as it cooks. Drain any excess grease and set the sausage aside.
- In a mixing bowl, whisk together the eggs, milk, salt, and black pepper. Heat a lightly greased skillet over medium heat. Pour in the egg mixture and stir continuously until the eggs are scrambled and fully cooked. Remove from heat.
Assembly
- Place each tortilla on a clean surface. In the center, add a layer of shredded cheddar cheese, followed by a spoonful of cooked sausage and scrambled eggs. Top with a bit more cheese if desired for extra melty goodness.
- Fold in the sides of the tortilla, then roll it up tightly like a burrito to enclose the filling.
Cooking
- Grease a skillet with a little butter or oil and heat it over medium heat. Place the roll-ups seam-side down in the skillet and cook for 2–3 minutes per side, or until golden brown and crispy.

- Serve your breakfast roll-ups warm, with fresh fruit, a dipping sauce, or simply on their own. They’re perfect for eating right away or wrapping in foil to take on the go.
