Ingredients
  

Main Ingredients
  • 400 ml coconut milk Use full-fat for richer flavor.
  • 2 cups glutinous rice flour Essential for texture.
  • 3/4 cup sugar
  • 1/2 can condensed milk
  • 1 cup fresh milk or evaporated milk
  • 3 pcs eggs Ensure at room temperature.
  • 1/4 cup melted butter
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • to taste Grated cheese For toppings; use sharp or well-aged cheese for contrast.

Method
 

Preparation
  1. In a bowl, combine all the ingredients except the cheese. Mix well until combined.
  2. Grease the baking pan or llanera, and line it with parchment paper or banana leaf.
  3. Pour the bibingka batter mixture into the prepared pan.
Baking
  1. Preheat the oven to 150°C (about 300°F) for 10 minutes, then bake for 30 minutes.
  2. Remove from the oven and top with grated cheese.
  3. Return to the oven and bake for another 10 minutes.
Serving
  1. Once done, slice into your desired size and serve warm.

Notes

For added flavor, serve with a drizzle of fresh coconut cream or more cheese on top. Pairs well with tea or coffee. To store, let cool completely and wrap tightly for refrigeration up to a week, or freeze for longer storage.
