Preparation
- In a bowl, combine all the ingredients except the cheese. Mix well until combined.
- Grease the baking pan or llanera, and line it with parchment paper or banana leaf.
- Pour the bibingka batter mixture into the prepared pan.
Baking
- Preheat the oven to 150°C (about 300°F) for 10 minutes, then bake for 30 minutes.
- Remove from the oven and top with grated cheese.
- Return to the oven and bake for another 10 minutes.
Serving
- Once done, slice into your desired size and serve warm.
Notes
For added flavor, serve with a drizzle of fresh coconut cream or more cheese on top. Pairs well with tea or coffee. To store, let cool completely and wrap tightly for refrigeration up to a week, or freeze for longer storage.
