  • 1/2 cup unsalted butter, softened Make sure it's softened for easy mixing.
  • 1/2 cup creamy peanut butter Chunky peanut butter can be used for extra flavor.
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour Can be substituted with gluten-free flour blend.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Chocolate candies or chips Optional for topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, beat together the softened butter, peanut butter, and brown sugar until smooth.
  3. Add in the egg and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Roll the dough into balls and place them on a baking sheet, flattening them slightly.
  6. If desired, press chocolate candies or chips into the tops of the cookies.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be served warm or at room temperature. They pair well with milk, coffee, or vanilla ice cream. For freshness, store in an airtight container at room temperature for about a week, or freeze for up to three months.
