Ingredients
  

For the parfait layers
  • 1.5 cups graham cracker crumbs
  • 8 ounces cream cheese, softened Make sure it is at room temperature for easy mixing.
  • 1 cup heavy whipping cream or whipped topping Can use whipped topping for a lighter version.
  • 2 cups mixed berries (strawberries, blueberries, raspberries) Use fresh and ripe berries for the best flavor.
  • 0.25 cups sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Mix until smooth.
  2. In another bowl, whip the heavy cream until stiff peaks form, then fold it gently into the cream cheese mixture.
  3. In a glass or parfait dish, layer the graham cracker crumbs, cream cheese mixture, and mixed berries.
  4. Repeat the layers until the glasses are full.
  5. Top with additional berries and whipped cream if desired.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

These parfaits are great for picnics, barbecues, or family gatherings. You can add a sprig of mint on top for extra color and freshness. Store leftovers covered in plastic wrap in the refrigerator, best consumed within 2-3 days.
