Ingredients
  

Main Ingredients
  • 2–4 pieces eggs
  • 2 pieces corn tortillas
  • 1 cup ranchero sauce (or red enchilada sauce)
  • 1/2 cup cooked chorizo or refried beans (optional) Optional for added protein
  • 1/2 cup shredded cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded lettuce
  • 1 tbsp oil or butter
  • to taste Salt & pepper

Method
 

Preparation
  1. Warm the tortillas in a skillet until they are soft and slightly toasted. Place them on plates.
  2. If using chorizo or refried beans, spread them over the tortillas.
  3. Heat the ranchero sauce in a small pan.
Cooking
  1. Fry the eggs in oil or butter until the whites are set but the yolks remain runny.
  2. Place the fried eggs over the tortillas and spoon the warm ranchero sauce around or over them.
  3. Sprinkle shredded cheese on top so it melts into the hot sauce.
  4. Finish by adding fresh diced tomatoes and shredded lettuce.

Notes

Ranch Eggs are best served hot. Enjoy them as a hearty breakfast or satisfying brunch, and pair with a side of fruit or avocado. Store leftovers in an airtight container in the refrigerator for up to 2 days.
