Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon or pumpkin pie spice
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup pumpkin purée canned or homemade
  • 1/2 cup nut butter any variety (peanut, almond, etc.)
  • 1/2 cup brown sugar
  • 2 large eggs lightly beaten
  • 1/2 cup milk or dairy-free alternative

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, baking powder, cinnamon, and salt.
  3. In another bowl, combine pumpkin purée, nut butter, brown sugar, eggs, and milk until well blended.
Baking
  1. Gradually fold the wet ingredients into the dry ingredients until just combined.
  2. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  3. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
  1. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
