  • 2 pieces ripe bananas, mashed Ensure bananas are very ripe for best flavor.
  • 2 pieces eggs Can be substituted with flax eggs for vegan option.
  • 1/2 cup sugar
  • 1/2 cup flour Can use whole wheat flour for more fiber.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix cottage cheese, mashed bananas, and eggs until well combined.
  3. Add sugar, flour, baking powder, baking soda, vanilla extract, and salt. Mix until just combined.
  4. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool before slicing.

Notes

Serve warm with a pat of butter, drizzled honey, or yogurt. Pairs well with coffee or tea. Store wrapped tightly at room temperature for up to three days or frozen for up to three months.
