  • 1 cup cottage cheese Use non-fat cottage cheese for a lower-calorie option.
  • 2 pieces ripe bananas, mashed Make sure the bananas are really ripe for the best flavor.
  • 2 pieces eggs Can be substituted with flaxseed meal or applesauce for a vegan option.
  • 1 tsp vanilla extract For added flavor.
Dry Ingredients
  • 1 cup flour You can experiment with whole wheat flour as a variation.
  • 1/2 cup sugar Increase slightly for a sweeter bread.
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the cottage cheese, mashed bananas, and eggs until well mixed.
  3. In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Stir in the vanilla extract.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

You can serve plain, toasted, or with butter/nut butter. Store wrapped at room temperature for up to 3 days, can refrigerate for up to a week, or freeze for up to 3 months. Slice before freezing for easy thawing.
