  • 1 cup black beans, rinsed and drained
  • 1/2 cup natural peanut butter or almond butter Choose based on preference
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup Maple syrup for vegan option
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional) Use dairy-free for vegan version

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease an 8-inch square baking pan.
  2. In a food processor, blend the black beans until smooth.
  3. Add the peanut butter, cocoa powder, honey, vanilla, baking powder, and salt, and blend until well combined.
  4. If using, stir in the chocolate chips.
  5. Pour the brownie batter into the prepared baking pan and spread evenly.
Baking
  1. Bake for 20-25 minutes or until a toothpick comes out clean.
  2. Let cool before cutting into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week or freeze for up to 3 months. Make sure to wrap tightly to avoid freezer burn. Blend the black beans well for smooth texture. For sweeter brownies, add more honey or maple syrup. Experiment with different nut butters for unique flavors.
