Main Ingredients
  • 2 pieces ripe bananas, mashed Make sure the bananas are very ripe for best sweetness.
  • 2 pieces eggs Can be replaced with flax eggs to make vegan.
  • 1 cup rolled oats Do not substitute with flour.
  • 1/2 cup peanut butter or almond butter Feel free to experiment with different nut butters.
  • 1/4 cup honey or maple syrup For a vegan option, use maple syrup.
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips Optional; dark chocolate for a healthier option.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a large bowl, mix the mashed bananas and eggs until well combined.
  3. Stir in the peanut butter (or almond butter), honey (or maple syrup), and vanilla extract.
  4. In a separate bowl, combine the rolled oats, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in optional chopped nuts or chocolate chips if desired.
  6. Pour the mixture into the prepared baking dish and spread evenly.
Baking
  1. Bake for 20-25 minutes or until the edges are golden and a toothpick comes out clean.
  2. Allow to cool before slicing into squares.

Notes

These squares make a delicious breakfast on their own, or paired with yogurt or fresh fruit. Store in an airtight container in the refrigerator for about a week, or freeze for longer storage.
