  • 1 lb pork (belly or ribs) Choose a fatty cut for added flavor.
  • 6 cups water
  • 1 large onion, quartered
  • 2 medium tomatoes, quartered
  • 1 radish, sliced
  • 1 cup green beans
  • 1-2 green chili peppers Adjust for spiciness.
  • 1 packet sinigang mix or tamarind paste Use to achieve sour taste.
  • to taste salt and pepper
  • optional fish sauce Add based on preference.

Method
 

Preparation
  1. In a pot, bring the water to a boil and add the pork.
  2. Add the onion and tomatoes, and simmer until the pork is tender.
  3. Stir in the radish and green beans, and cook until tender.
  4. Add the sinigang mix or tamarind paste, and chili peppers.
  5. Season with salt and fish sauce, adjusting to taste.
  6. Serve hot with a side dipping sauce.

Notes

You can add a side of rice for a complete meal. Store leftovers in an airtight container in the fridge for up to three days or freeze for up to a month.
