Ingredients
  

For the marinade
  • 750 g pork Cut into cubes
  • 2.5 tbsp lemon extract / juice For marinating the pork
  • 300 g pork liver Cut into strips
  • 1 tbsp lemon extract / juice For marinating the liver
  • Ground black pepper To taste
  • Soy sauce To taste
Main ingredients
  • 2 pcs chorizo/sausage Sliced
  • 9 pcs potato marbles You can also use regular potatoes, cut into cubes
  • 2 small carrots Sliced
  • 1 medium onion Chopped
  • 4 cloves garlic Minced
  • 1 pcs bell pepper Chopped
  • 6 pcs tomatoes Chopped
  • 2 pcs bay leaves
  • 2 cups hot water
  • 1/3 cup tomato sauce
  • 1/4 cup green peas Optional
  • 1/4 cup dried raisins
  • Cooking oil For frying
  • Salt To taste
  • Cheese For garnishing, grated

Method
 

Preparation
  1. Marinate the pork and pork liver separately with lemon extract, soy sauce, and ground black pepper for 1 hour. Set the marinade sauce aside.
  2. Heat oil in a pan, then fry the carrot and potatoes until light brown. Remove them from the pan and set aside.
  3. In the same pan, fry the marinated pork liver for about 3 minutes. Remove from the pan.
Cooking
  1. Sauté the garlic and onion in the pan until aromatic. Then add the tomatoes and bell pepper, cooking until soft.
  2. Add the marinated pork and bay leaves to the pan. Sauté for 5 minutes, then add the marinade sauce and simmer for another 5 minutes.
  3. Stir in the tomato sauce and hot water. Cover and simmer for 20 minutes or until the pork is tender.
  4. Once tender, mix in the carrot, potatoes, and raisins. Continue to simmer until everything is cooked through.
  5. Finally, add the pork liver, chorizo, and green peas. Simmer for about 5 minutes.
  6. Sprinkle with grated cheese and add salt to taste. Simmer until the flavors meld and the sauce thickens.

Notes

Make sure to marinate the pork well; this enhances the flavor. Adjust the level of soy sauce and salt according to your taste preferences. For added depth of flavor, you can simmer the dish longer. If you like a bit of sweetness, add more raisins or use sweet sausage.
