Pork Menudo

Ingredients
  

Marinade
  • 750 g 750g pork, cut into cubes
  • 250 g 250g pork liver
  • 2 tablespoons Calamansi juice
  • 3 tablespoons Soy sauce
  • to taste Pepper
Vegetables and Additional Ingredients
  • 5 pcs 5 overripe tomatoes
  • 2 large 2 large bell peppers
  • 2 medium 2 medium potatoes
  • 1 medium 1 medium carrot
  • 155 g 155g green peas
  • 1 medium 1 medium onion
  • 4 cloves 4 cloves garlic
  • 5 pcs 5 pcs hotdog
  • 2 cups 2 cups water
  • as needed tablespoons Cooking oil

Method
 

Preparation
  1. Marinate the pork and pork liver separately with calamansi juice, soy sauce, and pepper for 1 hour. Remember to keep the marinade sauce.
Cooking
  1. In a pan, add oil and fry the bell peppers for a minute. Set them aside.
  2. Fry the carrots and potatoes lightly. Set them aside with the bell peppers.
  3. Fry the hotdogs until they are cooked, then set them aside.
  4. In the same pan, fry the pork liver for a few minutes and then remove it from the pan.
  5. Sauté garlic and onion in the same pan until they become aromatic.
  6. Add the tomatoes and sauté until they are soft, then crush them.
  7. Add the marinated pork and sauté for about 8 minutes.
  8. Pour in the marinade sauce and water, then let it simmer.
  9. Cover and cook until the pork is tender.
  10. Add the carrots and potatoes, cooking until they are tender as well.
  11. Finally, add the fried pork liver, hotdogs, bell peppers, and green peas. Simmer for a few more minutes until the sauce thickens.
  12. Transfer to a serving dish.

Notes

Pork Menudo is best served hot with steamed rice. For extra flavor, let the pork marinate longer if time allows. Adjust the soy sauce and calamansi juice to taste.
