Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
For the filling
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice Use fresh lemons for the best flavor.
  • 1 teaspoon lemon zest Don't skip the lemon zest; it adds aroma and depth of flavor.
  • 1/2 teaspoon baking powder
  • Pinch of salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish.
  2. In a mixing bowl, combine the flour, powdered sugar, and softened butter. Mix until crumbly, then press this mixture into the bottom of the prepared baking dish.
  3. Bake for 15 minutes or until lightly golden.
Filling
  1. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt.
  2. Pour the lemon mixture over the baked crust and return to the oven.
  3. Bake for an additional 20-25 minutes or until set.
Serving
  1. Let cool before slicing into squares and dust with powdered sugar if desired.

Notes

Perfect Lemon Bars are best served chilled or at room temperature. You can dust them with powdered sugar before serving. They pair well with tea or lemonade. Store leftovers in an airtight container at room temperature for a couple of days. They can also be refrigerated for a week or frozen for longer storage.
