- In a heavy 5-quart pot, combine the butter, evaporated milk, and white sugar.
- Cook the mixture on medium heat, stirring occasionally, until it starts to boil.
- Once boiling, stir continuously until the mixture reaches the 'soft ball stage'.
- Remove the pot from heat and let it cool slightly while stirring until it loses its glossy appearance.
- Add the pecans to the mixture and stir until it starts to thicken.
- Drop spoonfuls of the mixture onto foil or waxed paper to cool and harden.
Notes
To store pecan pralines, keep them in an airtight container at room temperature. They can last for about a week or two, but are usually enjoyed long before that. Use a candy thermometer for precision and consider adding a pinch of salt for extra flavor.
