  • 8 oz cream cheese, softened Make sure the cream cheese is completely softened for easy mixing.
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (canned or frozen)
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 ea jalapeño, seeded and minced For a little extra kick, leave some seeds in the jalapeño.
  • 1 teaspoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
For Serving
  • Tortilla chips For serving.

Method
 

Preparation
  1. In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese until well mixed.
  2. Gently fold in the black beans, corn, diced tomatoes, red onion, cilantro, and jalapeño.
  3. Add lime juice, chili powder, cumin, salt, and pepper to taste, stirring to combine.
  4. Shape the mixture into a log or place in a serving dish.
  5. Refrigerate for at least 30 minutes to firm up.
Serving
  1. Place the Party Cowboy Caviar Cheese Log on a nice platter and surround it with crispy tortilla chips.

Notes

Store any leftover cheese log in an airtight container in the refrigerator for about 3 to 5 days. It can be served cold or at room temperature. You can customize this recipe by adding different ingredients, such as diced avocado or flavored cream cheese.
