  • 12 oz pasta of your choice Any type of pasta can be used.
  • 4 cups water or broth Broth adds additional flavor.
  • 2 cups chopped vegetables (like bell peppers, spinach, or tomatoes) Feel free to mix and match vegetables.
Seasonings and Oil
  • 1 teaspoon salt Adjust based on taste.
  • 1 teaspoon garlic powder Add more for stronger garlic flavor.
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil Can be replaced with other cooking oils.
Optional Toppings
  • grated cheese For topping, add as much as desired.
  • fresh herbs Use any preferred herbs.

Preparation
  1. In a large pot, combine the pasta, water or broth, chopped vegetables, salt, garlic powder, onion powder, and olive oil.
  2. Bring the pot to a boil over medium-high heat.
  3. Once boiling, reduce the heat to medium-low and cover the pot.
  4. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and the vegetables are tender.
  5. Remove from heat and let it sit for a few minutes before serving.
  6. Top with grated cheese and fresh herbs if desired.

Notes

This one-pot pasta is great for meal prep, and leftovers can be stored in an airtight container for up to 3 days. Reheat in pot or microwave. Feel free to add proteins like cooked chicken, shrimp, or beans.
