Ingredients
  

Main ingredients
  • 2 large boneless chicken breasts Ensure they are of similar size for even cooking.
  • 600 g baby potatoes Halve if large.
  • 250 g green beans Trimmed.
Seasoning and oil
  • 3 tbsp olive oil Divided.
  • 3 cloves garlic Minced.
  • 2 tsp dried Italian herbs
  • 1 tsp paprika
  • 1/2 tsp chili flakes Optional, adjust for heat preference.
  • to taste Salt & pepper
  • 1 tbsp fresh parsley Chopped, for garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and lightly grease a large baking dish or tray.
  2. In a large bowl, toss baby potatoes with 2 tbsp olive oil, half of the minced garlic, 1 tsp of Italian herbs, paprika, salt, and pepper.
  3. Season the chicken breasts with the remaining olive oil, garlic, Italian herbs, chili flakes (if using), salt, and pepper.
Baking
  1. Add the seasoned potatoes to one side of the baking dish and place the chicken breasts alongside them.
  2. Bake for 30–35 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and fork-tender.
  3. After 20 minutes, add the green beans to the tray, lightly seasoned and tossed in olive oil, and bake for the remaining time.
Serving
  1. Remove from the oven, let the chicken rest for 5 minutes, then slice and spoon over pan juices.
  2. Garnish with fresh parsley and serve hot.

Notes

For a cozier presentation, serve directly from the baking dish. You can add a side salad or crusty bread for a more filling meal. For variations, consider adding lemon zest or using chicken thighs.
