  • 1/2 teaspoon crushed red pepper flakes Adjust according to spice tolerance.
  • 1 large yellow onion, diced
  • 4 cups chicken broth Use low-sodium broth if preferred.
  • 1 cup heavy cream Can substitute with coconut cream for a dairy-free option.
  • 2 large potatoes, sliced Use any variety of potatoes.
  • 2 cups kale, chopped Can substitute with spinach or Swiss chard.

Method
 

Preparation
  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the diced onion and crushed red pepper flakes, and sauté until the onion is translucent.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the sliced potatoes and cook until tender, about 15 minutes.
  5. Stir in the heavy cream and kale, and cook until the kale is wilted.
  6. Season with salt and pepper to taste before serving.

Notes

For added flavor, include garlic while sautéing the onions. Adjust the spice level as needed. Store leftovers in an airtight container in the refrigerator for 3 to 4 days. To reheat, gently warm on the stovetop or microwave.
