Preparation
- Prepare a baking sheet lined with parchment paper.
- In a medium microwave-safe bowl, combine the semi-sweet chocolate chips and white chocolate chips.
- Microwave the mixture on high in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth (1 to 2 minutes total).
- Add the peppermint extract and a pinch of salt to the melted chocolate, stirring well to combine.
- In a large mixing bowl, combine the miniature marshmallows and chopped pecans.
- Pour the melted chocolate mixture over the marshmallows and pecans, ensuring even coverage.
- Gently fold the mixture together until all marshmallows and pecans are coated with chocolate.
- Drop heaping spoonfuls of the mixture onto the prepared baking sheet, leaving space between each cluster.
- Sprinkle mini chocolate chips over the top of each cluster for garnish, pressing them lightly into the chocolate.
- Chill the baking sheet in the refrigerator for at least 1 hour or until clusters are firm.
- Once set, lift each cluster off the parchment and store them in an airtight container in the refrigerator.
Notes
These clusters can be served as a dessert or sweet snack anytime. Store them in an airtight container in the refrigerator, where they will stay fresh for about a week. For longer storage, they can be frozen.
