  • 1 piece ripe banana, mashed
  • 1/2 cup cottage cheese Can substitute with Greek yogurt.
  • 1/2 cup peanut butter Feel free to swap for almond butter.
  • 2 tbsp honey Adjust the sweetness to taste.
  • 1 tsp vanilla
  • 2 tbsp mini chocolate chips For sweet bites.
  • 2 tbsp crushed oats Adds texture.

Method
 

Preparation
  1. Blend the banana, cottage cheese, peanut butter, honey, and vanilla until the mixture is smooth and creamy.
  2. Spread the filling evenly over each tortilla, leaving a small border around the edges.
  3. Sprinkle mini chocolate chips and crushed oats over the filling for sweet bites and added texture.
  4. Roll each tortilla up tightly into a long log shape.
  5. Wrap each roll and chill in the refrigerator for 20 to 30 minutes until they are firm enough to cut neatly.
  6. Unwrap the rolls and trim the ends if you want a cleaner look.
  7. Slice into thick pieces or serve whole as chilled wraps.

Notes

These roll-ups make a great snack or quick breakfast. Store in an airtight container in the refrigerator for up to 3 days. Can be made a day or two in advance.
