  • 2 tablespoons honey Adjust sweetness based on preference.
  • 1 teaspoon vanilla extract
  • 1 cup crushed vanilla wafers Can substitute with graham crackers.
  • 2 tablespoons oat flour
  • 2 tablespoons mini chocolate chips
  • 1 pinch salt

Method
 

Preparation
  1. Line a small loaf pan or tray with parchment paper.
  2. In a blender, blend the cottage cheese, banana, peanut butter, honey, vanilla, and salt until smooth.
  3. Transfer the mixture to a bowl and stir in the crushed vanilla wafers and oat flour until a thick dough forms.
  4. Fold in the mini chocolate chips.
  5. Scoop the mixture onto the parchment and shape it into a log.
  6. Chill for at least 2 hours until firm.
  7. Once firm, cut into coins and keep refrigerated.
