  • 1/2 cup mashed ripe banana Ensure the banana is ripe for optimal sweetness.
  • 1/4 cup almond butter or peanut butter Choose your preferred nut butter.
  • 1 tbsp honey or maple syrup Adjust based on your sweetness preference.
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Pinch salt
Optional Add-ins
  • 2 tbsp raisins Can substitute with mini chocolate chips or chopped nuts.

Method
 

Preparation
  1. In a mixing bowl, combine the rolled oats, mashed banana, almond butter, honey (or maple syrup), ground cinnamon, vanilla extract, and a pinch of salt. Mix until well blended.
  2. If desired, fold in the optional ingredients like raisins, mini chocolate chips, or chopped nuts.
  3. Scoop out tablespoon-sized amounts of the mixture and roll them into balls.
  4. Place the energy bites on a baking sheet and refrigerate for at least 30 minutes until firm.

Notes

These energy bites can be served on their own or with a dipping sauce like yogurt or a drizzle of honey. Store in an airtight container in the refrigerator for up to a week. Can also be frozen for longer storage.
