- In a mixing bowl, combine the rolled oats, mashed banana, almond butter, honey (or maple syrup), ground cinnamon, vanilla extract, and a pinch of salt. Mix until well blended.
- If desired, fold in the optional ingredients like raisins, mini chocolate chips, or chopped nuts.
- Scoop out tablespoon-sized amounts of the mixture and roll them into balls.
- Place the energy bites on a baking sheet and refrigerate for at least 30 minutes until firm.
Notes
These energy bites can be served on their own or with a dipping sauce like yogurt or a drizzle of honey. Store in an airtight container in the refrigerator for up to a week. Can also be frozen for longer storage.
