- In a mixing bowl, combine the rolled oats, mashed banana, almond butter, honey (or maple syrup), ground cinnamon, vanilla extract, and salt. Mix well until all ingredients are fully combined.
- If using, fold in the raisins, mini chocolate chips, or chopped nuts.
- Once mixed, use your hands to form small balls, about 1 inch in size.
- Place the energy bites on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
Notes
Use very ripe bananas for the best flavor and sweetness. If you prefer a smoother texture, blend the ingredients in a food processor. Feel free to experiment with different nut butters for varied flavor profiles. Store in an airtight container in the refrigerator for up to a week.
