No-Bake 4th of July Swirl Pie

Ingredients
  

For the crust
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
For the filling
  • 1 cup heavy cream Whipped until stiff peaks form
  • 1 cup sweetened condensed milk
  • 1/2 cup strawberry puree
  • 1/2 cup blueberry puree
  • 1 tablespoon gelatin Optional, to help set
  • Food coloring Optional, for swirls

Method
 

Preparation of the crust
  1. Mix the graham cracker crumbs and melted butter until evenly combined.
  2. Press the mixture into the bottom and up the sides of a pie dish.
  3. Chill in the refrigerator.
Preparation of the filling
  1. In a large bowl, beat the heavy cream until stiff peaks form.
  2. In another bowl, mix the sweetened condensed milk and gelatin (if using).
  3. Gently fold the whipped cream into the condensed milk mixture until smooth.
  4. Divide the mixture between two bowls. Add strawberry puree to one and blueberry puree to the other, mixing gently to combine.
Assembly of the pie
  1. Pour the mixtures into the crust, alternating colors to create a swirled effect.
  2. Use a toothpick or knife to create swirls if desired.
  3. Chill the pie in the refrigerator for at least 4 hours or until set.
  4. Slice and serve.

Notes

Serve the pie chilled with a dollop of whipped cream and fresh berries for added decoration. Store leftovers in the refrigerator for up to 3 days.
