Method
Preparation of the crust
- Mix the graham cracker crumbs and melted butter until evenly combined.
- Press the mixture into the bottom and up the sides of a pie dish.
- Chill in the refrigerator.
Preparation of the filling
- In a large bowl, beat the heavy cream until stiff peaks form.
- In another bowl, mix the sweetened condensed milk and gelatin (if using).
- Gently fold the whipped cream into the condensed milk mixture until smooth.
- Divide the mixture between two bowls. Add strawberry puree to one and blueberry puree to the other, mixing gently to combine.
Assembly of the pie
- Pour the mixtures into the crust, alternating colors to create a swirled effect.
- Use a toothpick or knife to create swirls if desired.
- Chill the pie in the refrigerator for at least 4 hours or until set.
- Slice and serve.
Notes
Serve the pie chilled with a dollop of whipped cream and fresh berries for added decoration. Store leftovers in the refrigerator for up to 3 days.
