Nandos Spicy Rice

Main Ingredients
  • 1 cup long-grain rice Rinsed thoroughly to remove excess starch.
  • 2 cups chicken broth or vegetable broth Use vegetable broth for a vegan version.
  • 2 tablespoons olive oil For sautéing.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper Adjust for spice level.
  • Salt to taste
  • Black pepper to taste
  • Fresh coriander for garnish (optional)

Method
 

Preparation
  1. Rinse the rice under cold water until the water runs clear.
  2. In a pan, heat olive oil over medium heat.
  3. Add diced onion and garlic, cooking until the onion is translucent.
  4. Stir in the red bell pepper and cook for an additional 2-3 minutes.
  5. Add the smoked paprika, cayenne pepper, salt, and black pepper.
  6. Pour in the chicken or vegetable broth and bring to a boil.
  7. Add the rinsed rice, stir well, and reduce heat to low.
  8. Cover and let it simmer for about 15-20 minutes or until rice is cooked and liquid is absorbed.
  9. Fluff the rice with a fork and garnish with fresh coriander if desired.

Notes

Store leftovers in an airtight container. It can be refrigerated for 3-4 days or frozen in portions. Adjust spiciness according to taste, and consider adding vegetables like peas or corn.
