- Rinse the rice under cold water until the water runs clear.
- In a pan, heat olive oil over medium heat.
- Add diced onion and garlic, cooking until the onion is translucent.
- Stir in the red bell pepper and cook for an additional 2-3 minutes.
- Add the smoked paprika, cayenne pepper, salt, and black pepper.
- Pour in the chicken or vegetable broth and bring to a boil.
- Add the rinsed rice, stir well, and reduce heat to low.
- Cover and let it simmer for about 15-20 minutes or until rice is cooked and liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh coriander if desired.
Notes
Store leftovers in an airtight container. It can be refrigerated for 3-4 days or frozen in portions. Adjust spiciness according to taste, and consider adding vegetables like peas or corn.
