- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and cook until it's soft, about 3-4 minutes.
- Add the minced garlic and bell pepper. Cook for another 2 minutes.
- Stir in the ground beef or turkey. Cook until it's browned and cooked through, breaking it up with a spoon.
- Add the can of diced tomatoes, cooked rice, chili powder, salt, and black pepper. Mix well.
- Cook for about 5 minutes on low heat, stirring occasionally.
- Remove from heat and stir in the shredded cheese until melted.
Notes
Serve warm in bowls or on plates. Goes well with a side salad or crusty bread. For added flavor, top with extra cheese or herbs.
