Main ingredients
  • 1 pound ground beef or turkey You can use any ground meat of your preference.
  • 1 cup cooked rice Use leftover rice if available.
  • 1 onion diced onion Adds sweetness and flavor.
  • 2 cloves minced garlic For an aromatic touch.
  • 1 bell pepper diced bell pepper You can use any color.
  • 1 can diced tomatoes About 14 ounces.
  • 1 cup shredded cheese Cheddar or mozzarella works well.
Seasonings
  • 1 teaspoon chili powder Add more for extra spice.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil For cooking.
  • Fresh herbs for garnish Optional for serving.

Method
 

Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and cook until it's soft, about 3-4 minutes.
  3. Add the minced garlic and bell pepper. Cook for another 2 minutes.
  4. Stir in the ground beef or turkey. Cook until it's browned and cooked through, breaking it up with a spoon.
  5. Add the can of diced tomatoes, cooked rice, chili powder, salt, and black pepper. Mix well.
  6. Cook for about 5 minutes on low heat, stirring occasionally.
  7. Remove from heat and stir in the shredded cheese until melted.

Notes

Serve warm in bowls or on plates. Goes well with a side salad or crusty bread. For added flavor, top with extra cheese or herbs.
