- Place the cubed potatoes in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until tender.
- Drain the potatoes well, return them to the pot, and add butter, milk, salt, and pepper. Mash until smooth and creamy.
- Stir in the shredded cheese until melted and fully mixed.
- If using, sprinkle chopped green onions on top.

Notes
For a garlic flavor, you can add minced garlic while boiling the potatoes. Leftovers can be stored in an airtight container in the fridge for about 3 days or frozen for longer storage.
