Ingredients
  

For the Meatloaf Muffins
  • 1 lb ground beef Ensure well mixed with other ingredients.
  • 1/2 cup breadcrumbs
  • 1/3 cup milk
  • 1 egg Large egg.
  • 1/4 cup ketchup For mixing and serving.
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
For the Mashed Potato Frosting
  • 2 cups mashed potatoes Can use leftover mashed potatoes.
  • 1/4 cup butter Softened.
  • 1/4 cup sour cream

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, mix ground beef, breadcrumbs, milk, egg, ketchup, salt, and pepper.
  3. Divide the mixture evenly into the muffin tin.
Baking
  1. Bake for 20-25 minutes or until cooked through.
  2. Meanwhile, prepare the mashed potatoes by mixing them with butter and sour cream.
  3. Once the meatloaf muffins are done, remove them from the oven and let cool slightly.
  4. Pipe or spoon the mashed potatoes on top of each muffin to resemble frosting.

Notes

These muffins are best served warm. Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep the mashed potato frosting separate until serving to maintain texture. Reheat before serving.
