Ingredients
  

For the crust
  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 5 tablespoons butter, melted
For the filling
  • 14 oz sweetened condensed milk
  • 1/3 cup lemon juice
  • 1 cup canned crushed pineapple, drained Ensure well-drained to avoid sogginess
  • 1 1/4 cups chopped pecans Can be substituted with walnuts for variation
  • 1 1/4 cups sweetened shredded coconut
  • 8 oz Cool Whip Fold in gently

  • maraschino cherries For topping
  • whipped cream For topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a pie pan to form the crust.
  3. In a separate bowl, mix together the sweetened condensed milk, lemon juice, crushed pineapple, chopped pecans, and shredded coconut until well combined.
  4. Gently fold in the Cool Whip until fully mixed.
  5. Pour the filling into the prepared crust.
  6. Chill in the refrigerator for at least 4 hours.
Serving
  1. Serve topped with maraschino cherries and whipped cream.

Notes

Keep any leftovers covered in the refrigerator for 3 to 5 days. Ensure that the Cool Whip is completely folded in to keep the filling light and airy.
