  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (or 1/2 tsp almond extract) For flavor variation.
  • 2 cups all-purpose flour
  • 1/2 cup ground cinnamon Plus more for coating.
  • 1/4 cup sugar for coating

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract (or almond extract).
  4. Gradually add the all-purpose flour and ground cinnamon, mixing until a soft dough forms.
  5. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 12-15 minutes or until the bottoms are lightly golden.
  2. Remove from oven and allow to cool slightly.
  3. While still warm, roll the cookies in a mixture of sugar and cinnamon until coated.
  4. Let them cool completely before serving.

Notes

These cookies are best enjoyed fresh but can also be served alongside a warm cup of hot chocolate or coffee. Allow them to cool completely when storing them in an airtight container at room temperature for up to a week.
