These light and refreshing Strawberry Shortcake Cups are perfect for celebrating Memorial Day with layers of sweet strawberries, soft cake, and Cool Whip.

Ingredients
  

For the Cups
  • 4 cups Pound cake or angel food cake, cubed Use any preferred cake type
  • 2 cups Fresh strawberries, chopped Choose ripe, sweet strawberries
  • 1 cup Fresh blueberries For garnish and flavor
  • 2 cups Cool Whip Can be substituted with Greek yogurt
  • 1/2 cup Strawberry glaze, optional Add for extra sweetness and decoration

Method
 

Assembling the Cups
  1. Start by adding cake cubes to the bottom of clear cups.
  2. Spoon chopped strawberries over the cake cubes.
  3. Add a fluffy layer of Cool Whip on top of the strawberries.
  4. Sprinkle in a few blueberries.
  5. If the cups are tall enough, repeat the layers for extra flavor.
  6. Finish with more Cool Whip, strawberries, blueberries, and a small drizzle of strawberry glaze if you choose to use it.
  7. Chill the cups in the fridge until you are ready to serve.

Notes

These cups are best served chilled. Cover with plastic wrap for leftovers and store in the refrigerator. Add decorations for a festive touch.
